Pancakes without the guilt

Are you planning on indulging in pancakes this Pancake Day, but maybe you’re on a diet and worried you will feel guilty for eating them?

Remember, it is perfectly healthy for us to occasionally indulge in foods that may typically be labelled as ‘bad’ for us to eat.

However, if you do want to make your pancakes a little healthier, here are 6 tips:

  • Top your pancakes with some fresh fruit (for example raspberries, which are a good source of fibre and vitamins counting to one of your 5 a day).
  • Use wholemeal flour rather than white – this will boost the fibre content of your pancakes.
  • If using Nutella or syrup, be mindful of the portion size. These high-calorie/high-sugar foods can be easy to over consume. Maybe swap the Nutella for dark chocolate and boost your antioxidant intake.
  • Use skimmed milk instead of full fat for the pancake batter.
  • Cook with low-calorie cooking spray rather than butter/oil.

Here is our healthy, and yummy banana pancake recipe which you may like to try out at home:

Ingredients

  • 120g of oats
  • 2 ripe bananas
  • 2 eggs
  • 1 tsp of vanilla extract
  • ½ tsp of baking powder
  • Spray oil or ¼ tsp of oil brushed over the pan

Additional ingredients (toppings)

  • Honey
  • Berries or fruit
  • Greek yogurt
  • Chopped nuts
  • Raisins
  • Dark chocolate chips

Method

  1. Put the bananas into a bowl and mash them into puree.
  2. Add the oats and mashed banana to a blender and blitz to combine into a smooth batter.
  3. Pour the batter into a bowl and add the eggs, vanilla and baking powder and mix well until they are all combined.
  4. In an non-stick pan, spay some oil and heat until the pan is nice and hot.
  5. Spoon the batter into the pan, in a circle shape about 8-10cm in diameter and cook on one side 3-5 minutes until it starts to bubble.
  6. Gently flip the pancake and cook on the other side again for 3-5 minutes until golden brown.
  7. Keep going until the batter is all cooked.
  8. Plate up 2-3 pancakes and add your desired topping.
  9. You can always freeze the rest of the cooked pancakes for another day!
